Hi, I'm glad to help you with Italian recipes. Do you know pesto? That's the Genoese sauce above all others. I usually eat pesto with a particular kind of pasta, "trenette" very similar to spaghetti, or with boiled string bean, or on pizza.

Ingredients:
Put in a blender 1 cup of basil leaves ( or 4-5 plants, if you can find them ( only the leaves, of course!!)), 3 spoon of grated parmigiano and 3 spoon of a grated sheep's milk matured cheese ( I use Sardinian pecorino), 4 spoon of olive oil, 2 spoon of pine seed and a little, little little slice of garlic. If you want you can add some walnut kernels.
If you like it, you can try this: put to boil 3-4 little potatoes, some string beans and some broad beans. When they're almost done, add spaghetti. When the spaghetti are ready strain all and season them with pesto. It's so good!

hi FLAVIA iam mehdi from morocco last year i was for formazione in vallé d'aosta in italian kitchen for 3 mouth i realy like italian recipe pastaaaaaaaaaa :) well know i am in my city Casablanca but not for long time :( .. may be i will go to DUBAI to work with a great italian chef he is from NAPOLY well my problem is i don't know much words using in kitchen in English .... :(( can u help meeee plzzzzzzzzzz .

Hello!.. My husband is moroccan, and i finally gave in and cooked some Beef Tagine for him and his friends (also moroccan). if I remember correctly I could tell you the beef tagine..(just substitute chicken) First, I covered the bottom of the pot with about an inch of Vegetable Oil (substitute for oil of your choice)...i then put in the meat along with oregano, parsley, pepper, salt, CUMIN (there's something about Cumin and moroccans..lol), garlic is also a must have, and whatever other spices you chose i guess. I let that simmer for about 7-10 minutes. After that, I put in the water (make sure it covers the meat and veggies), the sliced potatoes, carrots, celery if you want (pretty much any vegetables you want). Then let it cook for about 45 minutes or so. you'll know when it's done because your whole place will smell delicious! :-) It's basically just a stew. Now, the couscous...I have noooo idea..my husbands dad in morocco says it takes his wife 1 1/2 to 2 1/2 hours...(if i remember correctly) just to prepare the couscous...it's very tidious if you want it to come out right. Hope this helps, (and I hope if you try the recipe it comes out good) :-)
