Potato Gnocchi
4 - 5 medium floury potatoes 2 - 3 cups flour 2 eggs
Peel & cut the potatoes into large chunks. Cook in water in large pot until soft - about 25 minutes. Drain. Mash thouroughly. Beat well with wooden spoon gradually adding 2 cups flour.
Add eggs & knead together ,add more flour as needed, till the mix stays together in a ball. Pull off smaller chunks & roll into logs about 2 cm diameter. Cut logs into 1 1/2 cm wide discs. Place on the back of a fork, press it with thumb and put on floured board. Sliding it off fork gives ridged effect.
Bring large pan of water to boil. Salt liberally. Lower pasta in with slotted spoon so the boiling water doesn't splash. Cook until pasta rises to top, then leave for 1 minute. Scoop pasta out with slotted spoon, serve with pesto, pasta sauce etc
